Method:

  • As the buckwheat noodles are cooking, heat some sesame oil in a large frying pan and cook the sliced chicken for about three to four minutes or until no longer pink.
  • Sauté the garlic and ginger for two minutes.
  • Add in the capsicum and then sauté for further two minutes.
  • Add in the hot sauce, rice vinegar, soy sauce and honey and mix thoroughly.
  • To make the peanut sauce, take a small bowl and whisk together the peanut butter and water. When they are combined, pour over the cooked chicken.
  • Simmer the peanut sauce for ten minutes or until it has thickened up.
  • Then add in the Japanese buckwheat noodles to the frying pan and turn off the heat.

  • Tamari x 2 teaspoons
  • Red capsicum (seeded & diced or sliced) x 1
